Dried Lemon, also known as: dried lime, black lime, noomi basra in Iraq, limoo amani in Iran and loomi in Oman, is a lime that has lost its water content, usually after having spent a majority of its drying time in the sun. They are used whole, sliced, or ground, as a spice mainly in Middle Eastern dishes.

Description

Dried lemons are actually limes and are used heavily in Gulf region and also Iranian cuisine where they add a strong bitter flavour in addition to sourness. They are made by boiling ripe limes in salt water, and then sun drying until the insides turn black. The outside colour varies from tan to black. They are sold whole or ground.

Uses:

Dried limes are usually used in legume, seafood or meat dishes. They are pierced, peeled or crushed before adding them to the dish. After cooking they become softer and edible. Dried limes are used to add a sour flavour to dishes, through a process known as souring. They can also be powdered and added to rice dishes. Powdered black lime is also used as an ingredient in Gulf-style dishes. It is a traditional ingredient of Turkish cooking, Persian cuisine and can also be found in neighbouring Arab countries, such as Iraq, Kuwait, Bahrain, Emeritus and Saudi Arabia. They can also be used to make dried lime tea.

Flavour:

Dried limes are strongly flavoured. They taste sour and citrusy like fresh limes but have an added earthy and somewhat smoky taste and lack the sweetness of fresh limes. Because they are preserved, they also have a slightly bitter, fermented flavour, but the bitter accents are mainly concentrated in the lime’s outer skin and seeds.

Packing & Shipment:

Packing is done in 10kg (pp) bags up to the customer and shipped in 40 feet containers which will carry up to 11 metric tons.
